~ Chocolate Chip Cheesecake Bars ~
Today is the first official day of the spring semester at my school. My first class of the day was physics…I can already tell that it’s going to be my hardest subject. However, it will take a few days before becoming truly scary, and thankfully I still have some time to post another recipe:

Now that the semester’s progressing, each week is getting busier and my to-do lists are longer than ever. I’ve realized that I am the most productive in the morning and I’ve subconsciously established a daily routine of waking up early, getting breakfast followed by a cup of coffee, and going to the library until it’s time for my first class.
One of the things I look forward to the most during days filled with classes, homework, appointments, and clubs is having one or two (sometimes more…) cups of coffee. I don’t really drink coffee just to stay awake (I could actually drink coffee right before bed and still fall asleep afterwards) but it just motivates me whenever I’m super stressed.
At the beginning of last week, especially on Tuesday, it was freezing outside and I tried to avoid being outdoors as much as possible because I was just starting to recover from a cold and refused to get sick yet again. After I came back from my sociology class, I went back to my dorm and decided to stay in and bake something.
I love baking on my own and experimenting with new recipes but baking with my friends is always a lot of fun too! We take turns adding and whisking ingredients, the dishes are done much faster, and we get a sweet treat to enjoy while watching a movie together!
Usually when I’m baking with them, I tend to choose recipes that are quite easy, more forgiving, and that don’t take too long to bake. I would recommend leaving cinnamon rolls or cheesecakes, which often need to be set aside overnight, for sleepovers only.
An ideal recipe to bake as a group are scones! They are ready in no time and can be extremely versatile!! For instance, when my friends came over, I decided to make chocolate chip scones with pastry cream, garnished with berries. It’s a delicious treat and simple enough that you can afford to talk and get distracted while making it and still have plenty of time and flexibility to create a perfect dessert!
